Chips celebrates 40 years of flapjacks

March 23, 2006 - Chips Restaurant located at 321 Boston Post Road, has been a landmark for many. Known for its perfect pancakes, the restaurant has grown over the years to meet the needs of its patrons.

Originally owned by Charles Marks who opened in 1966, George Chatzopoulos took over four years ago.

Chatzopoulos came to the United States from Greece in 1987 and work in restaurants from 1987 to 1996. George Chatzopoulos took over four years ago.

Chatzopoulos has made very few changes. "I did some renovations and recently added to the menu," he said.

He said he has extended the menu to meet customer demand by adding healthy breakfast choices such as egg whites with fresh fruit, oatmeal, turkey bacon and whole wheat pancakes.

He has also added weekend special omelet favorites such as Greek, Mediterranean, steak and cheese, Atkins, seafood and more. And breakfast is available all day. He has extended the pancake menu to now include specialties such as cinnamon raisin, peanut butter and banana, black forest (cherry and chocolate), Hawaiian, sweet potato.

Of the success his restaurant has had he attributes to the philosophy of his business. "We are a family restaurant. Everything is homemade and that's what makes the difference." Chatzopoulos said.

And he hires locally too.

Chatzopoulos said many high school students have gotten their first experience working at Chip's. The restaurant is also home to many civic organization meetings including the Orange Rotary and Chamber of Commerce.

And to meet the demand of individuals who like to eat dinner early specials are available daily from 3 to 6 p.m.

Chatzopoulos credits the restaurant's success to being community oriented.

"We are here because of local people. I believe if you give good service, good food and a clean atmosphere you make people happy and feel comfortable." he said.

Chip's employs 35 employees, seats 135 patrons, and will be hosting a blast from the past on it's anniversary date on April 4 from 7 to 11 a.m. 1960 pricing will be effect with $1.25 pancakes and 25 cents for coffee.
